Italian Spelt Salad With Strawberries And Mozzarella

A mix of Italian spelt and buckwheat as a base and then a mix of seasonal tomatoes, strawberries, basil, mozzarella, and pistachio nuts on top. Really delicious with a drizzle of balsamic glaze. Recipe by @recipebreakout from Denby Pottery.

Serves 2

Your choice of grains: spelt, buckwheat, bulgar wheat, barley, quinoa… or a mix
12 mixed cherry/baby plum tomatoes
A handful of strawberries
1 ball of mozzarella
Small bunch of fresh basil
Few pistachio nuts, roughly chopped

Start with your grains (spelt, buckwheat, bulgar wheat, barley, quinoa… or a mix) and follow the instructions on the pack for quantities and cooking time. Drain and rinse in cold water.

In the meantime, prep the other ingredients…12 or so mixed cherry/baby plum tomatoes, halved, a handful of similar sized strawberries, also halved, the stalks from a small bunch of basil, finely sliced, a ball of mozzarella, torn into small pieces and a few pistachio nuts, roughly chopped.

Then, transfer the grains to a bowl, season well, add in the basil stalks and a drizzle of oil and mix together.

Add the strawberries, mozzarella and tomatoes. Turn over a couple of times with a serving spoon, top into a serving bowl and finish with a few of the basil leaves and the nuts on top. Serve with the balsamic glaze.
