Tomato and Egg Breakfast Pizza

Pizza cravings can come at any time so give this breakfast style pizza a go and start your day right. Starting with a basic pizza base smothered in fresh tomato sauce, this recipe can be adapted to suit your own tastes. We’ve opted for this egg and tomato option but you can mix it up with any of your breakfast favourites, we’re thinking some crispy bacon, sausage or maybe even mushrooms.


1 portion pizza dough of choice


cornmeal, if desired

2-3 tablespoons pizza sauce or crushed tomatoes

1/2-3/4 cup shredded mozzarella

1/2 cup cherry tomatoes, cut in half

2 eggs

1-2 tablespoons grated parmesan

salt and freshly ground pepper

red pepper flakes


Preheat the oven with the shelf arranged in the middle at 240 degrees C. Lightly oil a baking sheet and line with cornmeal.

Form the dough into the desired shape and top with the sauce and shredded mozzarella. Add the cherry tomatoes and eggs then Parmesan, salt and freshly ground pepper.

Bake for 12-15 minutes until crisp and enjoy straight away.
