With the sun clutching onto the clouds this week, we’re hoping for a weekend of beautiful weather so we can sit and sip our recipe of the week, The Skinny (yep, it’s almost good for you) Coconut Margarita! Hurrah for a Friday cocktail recipe.
This week’s gastronomic wonder comes from the With Salt and Wit blog, and provides a refreshing twist on the classic margarita we all know too well. Laced with tequila and triple sec, this summer-loving tipple will have you dreaming of pure shores and palm trees. What’s more, the addition of coconut water and coconut milk follows the new hydration trend, where cult bloggers and lifestyle magazines are singing the health benefits of drinking coconut products and even claiming they’re better for you than pure water! So, if you’re in need of a drink after the week gone-by but trying not to over-indulge before your summer holiday, the Skinny Coconut Margarita is the option for you, your friends will never believe it’s actually good for them….
Why not try incorporating this fusion of Caribbean cool and South America heat with a Mexican themed dinner party or even just some garden-worthy snacks.
3 ounces lite coconut milk (from the can)
3 ounces tequila blanco
1 ½ ounces triple sec
8 ounces coconut water
Fresh lime wedge, to serve
The easy peasy method…
1. In a shaker, combine the coconut milk, tequila blanco, triple sec and coconut water.
2. Shake until combined.
3. Pour into cocktail glasses with ice.
4. Serve with a lime wedge.
Sip, Slurp and enjoy!
