Roasted Pumpkin & Apple Soup w/ Goat’s Cheese & Bacon

This time of year is the perfect opportunity to experiment with the seasonal vegetable, a healthy soup choice full of vitamins and minerals. This pumpkin soup recipe is an ideal option for a dinner party starter and  is great for using up leftover Halloween carvings.

The smooth soup is then topped with goats cheese and bacon for a more substantial dish and decorated with lightly toasted pumpkin seeds. Simply remove the bacon for a vegetarian version.
