Recipe Of The Week: New Year’s Resolution Breakfast Bowl

With a winter chill still in the air,  it can be hard not to turn to sinful comfort foods, but you don’t have to compromise that cosy feeling with this healthy, natural and delicious dish. The Spiced Pumpkin Porridge from Deliciously Ella is a warming bowl of goodness. Topped with caramelised apples and pecans it has subtle hints of cinnamon and nutmeg fused with the sweet taste of pumpkin and coconut – the perfect way to begin your day!

This breakfast bowl allows for versatility, change it up with different fruits, nuts and spices for a new taste every morning.

ingredients80g of oats

100ml of non diary milk

5 tablespoons of pumpkin puree (recipe below)

1 apple

1 teaspoon of coconut oil

1 teaspoon of maple syrup

1 teaspoon of cinnamon

40g of pecans

1 teaspoon of vanilla powder

1 teaspoon of cinnamon

½ teaspoon of ground ginger

Sprinkle of ground nutmeg

2 teaspoons of coconut sugar

instructionsFor the pumpkin puree, peel a small pumpkin, roughly chop it into chunks and steam for 25 minutes until soft. Then blend it in a food processor until totally smooth. To prepare the topping, core and slice the apple. Cook the apples and pecans with the coconut oil, maple and cinnamon in a pan for about 10 minutes, until the apples are soft but still holding their shape. While the apple cooks, make the porridge. Place the oats in a saucepan with 200ml of water and milk, cook for 4 minutes, stirring continuously. Add in the spices, pumpkin puree and coconut sugar and cook for another minute. When the porridge is cooked, spoon it into a bowl and finish with the apple and pecan topping before serving.
