Pumpkin and Apple Cider Fizz

With autumn in full swing we thought it was about time we added an autumnal cocktail to our repertoire bursting with seasonal flavours . Following on from summers fruity cocktail trends, we’re keeping the memories of a bygone summer alive with this cool yet autumnal cocktail found with thanks to Kitchen Konfidence food blog.  Keeping things seasonal before temperatures head further south, the cocktail has an unusually fruity addition in the form of a pumpkin and apple cider. A member of the Cucurbitaceae family, the pumpkin adds a natural sweetness to the cocktail teamed with traditional apple cider, whilst ginger beer adds a fieryness without being overly sweet.


1 1/2 oz. Pumpkin puree (homemade is best!*)
1 1/2 oz. Vanilla vodka
2 oz. Apple cider
1 1/2 oz. Fiery ginger beer


1. Fill a cocktail shaker with ice then add pumpkin puree, vanilla vodka and apple cider and muddle. Shake vigorously until well mixed and chilled
2. Strain into a glass filled with ice and top off with ginger beer

* To make pumpkin puree, cut a pumpkin in half and remove all seeds and any strands. Place the cut side of the pumpkin on a pre heated baking tray and roast for 30-40 minutes at 200 degrees. The pumpkin should be soft when pierced with a fork.  Remove from the oven and scoop out the pumpkin and leave to cool.  Once cooled, place in a blender and puree until smooth.
