Peach, Halloumi and Serrano Ham Salad

Who says salads have to be boring? Salads should be colourful and customised, made to include your favourite fresh ingredients. This mouthwatering peach, halloumi and Serrano ham salad is packed full of interesting ingredients for a taste of something a bit different. The sharp and ripe tones of the fruit provide depth and flavour, contrasting against the savoury for an exciting and delicious dinner.

Prepare yourself this refreshing salad from Wolf Down with only 10 ingredients and 10 minutes of your time.

7 slices of Serrano ham
2 ripe peaches, cut into 8 slices each
2 vine plum sundream tomatoes, cut into quarters
125g halloumi, sliced into six strips
2 tablespoons olive oil
2 handfuls raw pistachio kernels
sprigs of mint (optional)

For the Vinaigrette:

2 tablespoons fruity Habanero hot sauce
1 teaspoon English mustard
2 tablespoons cider vinegar
1 tablespon olive oil

On 2 plates, arrange the ham and tomato slices and set aside until serving up.

In a medium bowl, mix all your vinaigrette ingredients together and set aside.

Heat a griddle pan on a medium-high heat with a splash of olive oil. Once hot, add your slices of peach and griddle them until golden brown on each side. With a spatula, remove the peaches from the pan and arrange the peach slices carefully around the other ingredients.

Add another tablespoon of olive oil to the griddle pan and char the halloumi for 1-2 minutes on each side or once it starts to become squidgy.

Arrange the halloumi on top of the peaches & ham and generously dress the salad with the Habanero and mustard dressing. Sprinkle with pistachio kernels and add sprigs of mint to add some extra freshness to the salad.
