Healthy Halloween Doughnuts

Hosting a Halloween party this year? Why not surprise your guests with this deliciously healthy Halloween doughnuts recipe from the Mara’s Wonderland. With their fun spider web design they become the ultimate treat to spook your guests – and they are super easy to make too!

70g full grain spelt flour

60g spelt flour

40g melted coconut oil

30g raw cane sugar

30g coconut sugar

20g baking cocoa (optional)

100ml almond milk

1 ripe banana

1 tsp vanilla extract

1 tsp baking soda

1/4 tsp salt

For the glaze

Powdered sugar

Currant powder

Orange food colouring

Preheat oven to 180C.

Prepare a mini doughnut plate and set aside. Mix in a bowl flour, baking powder, salt and sugar and set aside. Mush your banana in a separate bowl using a fork. Whisk the almond milk, banana puree, coconut oil and vanilla extract until creamy. Add your flour mixture and stir briefly. Optionally, mix half of your dough with the cocoa powder and if necessary add some almond milk. Fill in your prepared dough approximately over 2/3 of your doughnut moulds using an icing bag or a freezer bag with a cut-off corner. Bake your donuts for approximately 13 minutes. Once cooked, remove from the oven and allow to cool slightly then remove from the moulds.

For the icing, mix the powdered sugar with some water and red currant powder until a thick liquid mixture is formed. Glaze your donuts with the prepared icing and let dry. Mix some powdered sugar with water and draw the spiderweb design on the doughnuts and let dry. Repeat these steps with the orange food colouring and decorate with some spooky items such as rubber spiders, pumpkins and thread.
