Halloumi Burger with Sticky Chilli Drizzle

August the 24th marks National Burger Day and we’ve got a real crowd pleaser that is perfect for non-vegetarians and vegetarians alike. Replacing the classic beef patty with a toasted, breadcrumb coated chunk of halloumi and serving with a tongue tingling sticky chilli sauce this burger is a tasty alternative that ticks all the boxes for the perfect burger. Try with a toasted mushroom and red onion like we have here or experiment with your own salad and ‘slaw.
(Makes 2 burgers), 3 tbsp vegetable oil, 5 mushroom (sliced), 3 tbsp semolina, pinch of salt and pepper, 1 egg, 5oz (about half a pack) of halloumi, cut into slices, 2 brioche rolls cup of lettuce or spinach leaves, ½ red onion, peeled and sliced

Sticky Chilli sauce:

¼ tsp ground ginger, 2 tbsp honey, 1+1/2 tbsp soft brown sugar, 2 tbps soy sauce, 1 tbsp sriracha

For the sauce, place all of the ingredients in a pan and bring to the boil, stir and cook for about 3 minutes to create a syrup.

Fry the mushrooms in a bit of oil and remove from the pan, add more oil and while that heats up place the semolina in a small dish with salt and pepper. Dip the halloumi into whisked egg then coat in the semolina before placing it in the pan. Fry on each side for 2-3 minutes.

To assemble, get your briche bun, place the lettuce and mushrooms on each bun then add your halloumi. Top with red onion and drizzle with the sticky chilli sauce.
