Combining the comfort of gooey grilled cheese with the indulgence of a tasty dipping sauce, this is the ultimate Friday night recipe from I am a Food Blog. Adapt this one to your own personal tastes mixing it up with what bread or cheese you use. This example has been made with pepper jack and mozzarella but you might want to try something with a stronger flavour or a wholemeal bread. 2 slices of any bread of your choice
1 tablespoon pesto
2 slices of cheese (pictured: pepper jack and mozzarella)
1/2 avocado, sliced
1 large handful spinach
1 tablespoon butter
Greek Yogurt Ranch Dressing, to dip
Placing one slice of bread on a chopping board, spread with pesto, one slice of cheese, avocado and a layer of spinach. Then add another layer of cheese followed by the last piece of bread and heat on a low-medium heat in the melted butter. Cook slowly until the bread goes golden brown and the cheese inside has melted. Flip over and toast on the other said. Once cooked, remove form the pan, slice into dippers and enjoy with the ranch dressing.
