8 oz. ball of pizza dough
Extra virgin olive oil
¼ cup of olives
½ cup of grape tomatoes
½ cup of marinated artichokes
1 small red onion
2 cloves of garlic
1 heart of romain lettuce
¼ cup of feta cheese
½ cup of mozzarella cheese
1 tbsp balsamic vinegar
Salt and ground black pepper
Preheat oven to 425 degrees.
Roll the dough into a ¼ inch thick rectangle, approx. 9×13 inches on the floured surface.
On an oiled baking sheet, prick the dough with a fork, then place it in the oven for 8-12 minutes until it browns at the edges.
Drain the artichokes and chop them into quarters along with the olives and tomatoes.
Peel and thinly slice the crunchy red onion, mince the garlic, and slice the romaine into 1-inch pieces.
When the dough has turned a light golden brown, remove it from the oven and sprinkle with mozzarella cheese.
Add olives, artichokes, tomatoes, garlic, onion and the feta cheese. Then season the ingredients with salt and fresh ground pepper.
Place back into the oven for about 10 minutes, until the cheese bubbles.
Toss the romaine with the balsamic vinegar, a trickle of olive oil, and seasoning into a medium sized bowl.
Add the romaine to the flat bread before cutting into slices and serving.
