Glass Noodle Salad With Shrimp

A fresh and delicious dish that is full of flavour and can be adapted to taste. With zesty lime flavours offering a distinguished kick to parsley, juicey prawns and firey peppers, this recipe makes a great evening meal as well as a delicious option for summer lunches.


2 bundles mung bean noodles
1/2 teaspoon sesame oil
1/4 cup plus 1 tablespoon fish sauce
4 limes (juiced)
2 1/2 teaspoons sugar
1 small diced shallot
1 diced serrano pepper
1/4 cup toasted dry roasted peanuts
1/2 bunch cilantro
1 diced green onion
12 large poached shrimp

Mint leaves
Bell peppers


Bring a pot of water to the boil. Completely submerge the noodles into the boiling water until pliable and soft. Drain, rinse under cold water and toss in sesame oil.

Whisk the lime juice, fish sauce and sugar in a bowl. Top with noodles and remaining ingredients.

Toss everything together until noodles are well coated. Finish with cracked black pepper and serve with lime wedges.
