Satisfy your sweet cravings with this delicious Dorset Apple Cake recipe from The Worktop. Filled with everybody’s favourite – apples, it is all you need for a perfect breakfast, dessert and tea time option!
Approx 3 large apples – peeled, cored and cut into pieces
4 medium eggs
2 1/2 cups all purpose flour
1 cup unsalted butter at room temperature
1/2 cup granulated sugar
1/4 cup whole milk
3/4 cup lightly packed light brown sugar
2 tbsp demerara sugar
1 tbsp baking powder
2 tsp cinammon
1 tsp vanilla extract
1/2 tsp salt
Icing sugar for decoration
Preheat oven to 350F / 175C. Line the bottom of your baking tray or pan with parchment paper and lightly oil the sides.
In a large bowl sift together the flour, baking powder, cinnamon and salt and then set aside. In a separate bowl, using an electric mixer on medium speed, cream together the butter and sugars until smooth and lighter in colour for about 5 minutes. Beat in the eggs, milk and vanilla extract. Once everything is mixed, add your wet ingredients into the dry ones and mix until just combined. Add two thirds of the batter into your prepared pan and spread the batter with a spatula until it’s even. Evenly layer one half of the apple pieces and add in the rest of the batter spreading it evenly with a spatula. Once the layers are spread evenly layer remaining apples and sprinkle the demerara sugar over the top. Place the tray in the middle of the oven and bake for 1 hour and 15 minutes until a toothpick comes out clean when inserted into the middle of your cake.
Allow the cake to cool in the pan for approx 5 minutes before removing and transferring it onto a cooling rack. Dust with powdered sugar once the cake is cooled and enjoy with a variety of toppings including yogurt, clotted cream, ice cream and custard!
