These chocolate oreo brownies from The Food Charlatan are indulgent, gooey and super chocolaty. Everything you would want in a sweet treat. Taking the classic chocolate brownie, and combining it with the delicious vanilla frosting featured in the classic Oreo, these brownies are perfect for parties, afternoon teas or simply to jazz up your lunch box. Use special dark cocoa powder to create that not-so-sweet Oreo taste.
1 1/4 cups of salted butter
2 cups of granulated sugar
1 1/2 cups of cocoa powder
1/2 teaspoon salt
1 tablespoon water
2 teaspoons vanilla extract
1 cup of all purpose flour
For the filling:
2/3 cups of salted butter, softened
5 cups of icing sugar
4 tablespoons of cream
4 teaspoons of vanilla
Pre-heat the oven to 170°C.
Start by melting the butter in a saucepan. Meanwhile, mix the sugar, cocoa powder and salt in a large bowl, once the butter has melted, bubbled and browned, beat into the dry ingredients.
Mix in the water and vanilla, then stir in the eggs. Once this is nicely beaten together, add the flour and mix until just combined.
Poor the batter into a lined 9 x 13 inch tray and bake for 25-30 minutes until cooked in the middle. Let this cool completely.
Use a 2 inch cookie cutter to cut circles and using a hot knife, slice horizontally in half.
To make the frosting, add the ingredients together gradually and mix together, then spread between to halves of brownie!
