Avocado Pasta

A simple, delicious recipe for any night of the week when you need to whip up something filling and easy to prepare. Create using your favourite pasta, simply blending all of the ingredients together to make a sauce and garnish to taste. We love the idea of a cilantro decoration and the addition of a poached egg, a touch of pepper and hey presto. A simple dinner you can cook for friends or for a cosy evening at home with a crisp glass of white.


3 Ounces of pasta

1/2 Avocado, pitted and peeled

1 Clove of garlic, mashed

Small handful of Cilantro, roughly chopped

Juice of quarter of a lime

1 Table spoon of olive oil

Salt and freshly ground pepper

1 fried egg, if desired

Roughly chopped Cilantro to garnish


While the pasta is cooking, add the avocado, garlic, cilantro, lime juice, and olive oil to a blender and blend well. When the pasta is cooked, save 2 tablespoons of pasta water and drain well. Toss the pasta with the avocado sauce, thinning with pasta water if needed. Season with salt and pepper to taste and top with a fried egg and cilantro, if desired. Enjoy!
