Welsh Rarebit

A classic dish made best with aged cheddar and good bread, this Welsh Rarebit recipe from I am a Food Blog is the solution when hunger strikes. An age old cheese on toast recipe, this makes a delectable midnight snack or lunch time option made with grated cheddar, dijon mustard and a splash of porter or ale. Simply mix all of the ingredients together to make a warm, cheesey sauce and spread over toast. Delicious.

1 tablespoon butter
1 tablespoon flour
1/2 cup IPA beer
1/4 cup whole milk
1 teaspoon dijon
1 1/2 cups grated aged cheddar
freshly ground black pepper
1 large egg yolk
4 slices lightly buttered sourdough toast, or toast of chioce

Melt the butter and stir in the flour. Once incorporated, whisk in the porter, milk and dijon mustard. Whisk constantly. Once the sauce starts to simmer, add the cheese and stir until melted, remove from the heat and mix in the egg yolk. Season to taste and spread over lightly buttered toast.
